The summer is here and so is the craving for some crunchy, refreshing and cool salads. The markets are now flooded with some super hydrating fruits and vegetables like cucumber, lettuce, cherry tomatoes, watermelon, musk melons etc. which are our saviours from this tyrant scorching heat.

So get ready for some lip-smacking and light salad dressings which are equally qualifying recipes to add your pool party menu too!!

1. Honey Mustard Vinaigrette Salad Dressing

The Ingredients
• 1 tbsp Honey
• 1/3 cup Balsamic Vinegar
• 2 tbsp Spicy brown Mustard
• salt and pepper to taste

Combine all ingredients in a bowl or jar and whisk together OR If using a jar then close and shake.
Place it in refrigerator to marinate for 2 hours minimum.

This spicy tangy and sweet combination is ideal for both fruit and garden fresh salad.

2. Classic Lemon and Olive Oil

The Ingredients
• 1 tablespoons lemon juice
• 3 tablespoons olive oil
• Black pepper to taste

Whisk the ingredients together.
If you want to make it thinner then add a teaspoon of water.
Add pepper to taste and store in the fridge.

This lemony dressing is ideal for strong-flavoured leaf, such as rocket or kale.

3. Lime and Chilli dressing

The Ingredients:
• Zest and juice of 1 lime
• 3 tablespoons olive oil
• 1 deseeded red chilli, chopped finely

Mix all the ingredients together and store in the fridge.

This Mexican-inspired dressing is ideal to add some spice in garden fresh salads and pasta salads

4. Creamy cucumber dressing

The Ingredients:
• 125g fat-free yoghurt
• ½ cucumber, chopped roughly
• 1 teaspoon lemon juice
• 1 clove garlic
• Freshly ground pepper to taste

Blend all ingredients together in a food processor or blender and store in the fridge.
In case blenders are not available then chop the cucumber finely and mix the ingredients together for a chunkier dressing.

This low fat and light creamy dressing is ideal for salads and wraps, also can be used as dip. This fat-free homemade natural yoghurt dressing is much lower in saturated fat than the packaged option available in the market.

5. Creamy mint dressing
Ingredients:
• 125g fat-free yoghurt
• 1 teaspoon lemon juice
• 1 clove garlic
• Freshly chopped mint (as per your taste)

Blend all the ingredients together and store it in the fridge.

This low-fat yogurt mint dressing is ideal for sprout salads, pasta salads, sandwiches, wraps and can be used as dip.

You can be creative with your dressings by mixing the combinations with
• Oils (Avocado oil, Virgin Olive oil, sesame oil),
• Citrus liquids/ Vinegar (balsamic vinegar, apple cider vinegar, lemon juice etc.)
• Spices and Herbs ( chilli flakes, Italian seasoning, garlic powder, black and white pepper powder, Indian salad masala, Himalayan rock salt etc.)
• Nuts (you can add some crunch with some roasted pine nuts, sesame seeds, walnut etc.)
